From Chiloé farming waters to packed frozen product

Toralla's value chain begins with long-line farming in more than 250 hectares of sea managed by Cultivos Toralla. Company personnel monitor growth from seeding through harvesting, while Chilean sanitary controls help protect water and product conditions.

The processing plant covers 4,000 m2 and is designed for flexible production from 100 to 300 MT of raw mussels per day. Once mussels enter the plant, they are washed, shelled, debyssed, cooked, selected, IQF frozen, graded, packed, and palletized in a continuous process described by Toralla as taking about 20 minutes.

Quality, traceability, environment

Controls built for demanding seafood markets

Toralla's quality system covers critical point control, batch documentation, and full traceability from sea extraction through cooking, freezing, and cold storage, with analyses for heavy metals, toxins, and microbiological indicators.

Shell waste from the plant is converted into whiting through a calcination process and sold as a natural soil fertilizer, reducing waste from the production cycle.
